\nThe milk is coagulated with liquid calf rennet and selected ferments, following a process dedicated to enhancing the characteristics of the sheep’s milk.
\nThe wheel is distinguished externally by its dark color, a sign of the product’s bold character. Ideal maturation occurs in about 120\u2013150 days, during which the cheese develops a compact paste, white or straw-yellow in color.
