Aged Barone Pecorino Cheese approx. 1.9 kg Vacuum-packed
A pecorino with a full, bold flavor that develops an increasingly aromatic profile as it matures, while maintaining the balance and sweetness typical of BARONE.
Barone stagionato is a table cheese with a semi-cooked paste, made from whole sheep's milk from free-range sheep raised in Sardinia.
The milk is coagulated with calf rennet and selected cultures, creating a pecorino with a balanced structure and authentic character.
The rind is golden yellow, while the paste, light in color, has slight eyes. Aging takes approximately 50–80 days, during which the cheese progressively develops aromas and intensity.
On the palate it has a sweet, bold flavor that in more mature forms evolves toward more aromatic and persistent notes. A versatile pecorino, capable of satisfying both those who love balanced flavors and those who prefer cheeses with a more intense character.
