Aged Goat Cheese Vecchio Capraro approx. 620 g vacuum-packed
A goat cheese with a strong, authentic character, born from the hills and mountain pastures of Sardinia and aged to develop intense aromas and an unmistakable personality.
Vecchio Capraro is a semi-cooked paste table cheese, made with whole goat's milk from goats raised free-range in the hills and mountain pastures of Sardinia.
The milk is coagulated with calf rennet, through a process that enhances the characteristics of the goat's milk and accompanies the cheese during aging.
The rind has a dark exterior color, enclosing a white paste with slight eyes. The ideal aging takes place over approximately 90–120 days, during which the cheese progressively develops its character.
On the palate it stands out for its bold and strongly aromatic taste. In the more aged wheels, pleasant spicy notes also emerge, which accentuate its personality and make it particularly appreciated by lovers of intense goat cheeses.
